The Perfect Cowboy Caviar for Your Next Cookout
It’s finally the beginning of summer which means cookouts are upon us! I had forgotten about Cowboy Caviar until my friend recently made it. It is such a refreshing and delicious dish. I had to put my own take on it and add a few extra ingredients!

This Cowboy caviar is a refreshing dish that your guests are sure to love.
Ingredients
- 1 can of black beans
- 2 cans of corn (tip: use two different kinds)
- 1 can pinto beans
- 2 bell peppers (I prefer red)
- 1 red onion
- 2 avocados
- 1/4 cup chopped cilantro
- 3 jalapeños (I enjoy the spice)
- Sauce:
- 4 Tb of lime juice
- 3/4 cup of olive oil
- 1/2 cup Olive Garden Italian dressing
- 2 Tb seasoning salt
- 1 Tb cumin
- 2 Tb Garlic Pepper
- Salt and pepper to taste (it usually needs a lot of salt
Instructions
- Rinse and drain beans
- Cut up all ingredients
- Combine all vegetables and beans
- Add in the sauce and marinate for at least 8 hours
- Drain off some of the liquid and serve
