The Perfect Cowboy Caviar for Your Next Cookout

It’s finally the beginning of summer which means cookouts are upon us! I had forgotten about Cowboy Caviar until my friend recently made it. It is such a refreshing and delicious dish. I had to put my own take on it and add a few extra ingredients!

This Cowboy caviar is a refreshing dish that your guests are sure to love.

Ingredients

  • 1 can of black beans
  • 2 cans of corn (tip: use two different kinds)
  • 1 can pinto beans
  • 2 bell peppers (I prefer red)
  • 1 red onion
  • 2 avocados
  • 1/4 cup chopped cilantro
  • 3 jalapeños (I enjoy the spice)
  • Sauce:
  • 4 Tb of lime juice
  • 3/4 cup of olive oil
  • 1/2 cup Olive Garden Italian dressing
  • 2 Tb seasoning salt
  • 1 Tb cumin
  • 2 Tb Garlic Pepper
  • Salt and pepper to taste (it usually needs a lot of salt

Instructions

  1. Rinse and drain beans
  2. Cut up all ingredients
  3. Combine all vegetables and beans
  4. Add in the sauce and marinate for at least 8 hours
  5. Drain off some of the liquid and serve
